Brewing this one today. Depending on my efficiency, it will be either a Blond or Strong Golden (prob closer to the latter).

Belgian Ale

9 lbs Belgian Pils
1 lb wheat
1 lb Munich
1 lb table sugar

0.5 oz Galena 14.2% - 60 min
0.5 oz Liberty 4.8% - 20 min

Wyeast 3522 Belgian Ardennes


Should come in around 1.065 to 1.069.

Nice! I love that Ardennes yeast too. Did you mash low on this one too?

Yep, around 148F. Hoping for a FG around 1.006 - 1.008.

Well, it's already got a good inch of kreusen and the airlock is starting to bubble away. Pitched the starter around 3pm, so that's not too bad (5-6 hours for positive pressure). Temp is a little high @ 75F (to start with anyway), so I'm doing the swamp cooler thing... would like the first few days to be below 70, and then I'll let it ramp up. Been over a year since my last Belgian batch (is this confessional?), so I'm pretty excited about it!

Just got done racking this one. Gravity is down to 1.007 (from 1.067). Nice and dry, which was what I was hoping for Smile

That looks like a great recipe. I have to put that one on the list of brews to do!

I am doing a rough Hennepin clone today, too bad it's not the same yeast that you used.

Since it's going to be about a month or two before I keg this one, I've decided to play around with it. I bought several funky brett-brews on the way home today... De Proef Signature Les Deux Brasseurs, Orval, and Lindemans Gueuze Cuvée René. Going to drink 80-90% of each one and pour the dreggs into my beer. Maybe I'll pick up a little funk, maybe it won't, but I'll enjoy the process!

Bottled this one tonight. It definitely had a brett aroma, but not a lot in the flavor department (brett flavor that is). Definitely planning on some extended aging though, so it will be interesting to follow the flavor development.

Did you pour the dreggs into your carboy? How many different beers did you add?

I poured in the dregs of these into the secondary over the course of a week:

De Proef Signature Les Deux Brasseurs (x1)
Orval (x2)
Lindemans Gueuze Cuvée René (x1)

The De Proef was very funky while the others were mild to medium.
