The Center City Brewing Company began in the fall of 2002 under the name Mutt Brewing. It was at this time that proprietor, Jason Pinkowski, decided to first brew the home brew kit that his wife bought him for Christmas 2001. This kit was a Brewers Best kit, a Brown Ale to be exact, some John Bull Prehopped Extract, no hops, no specialty grains, and a packet of dry yeast. The entire process happened in one fermentation bucket, 10 days in the bucket, 14 days in the bottle. Jason made for the first time, the wonderful elixir we call beer.
Well after brewing this batch, Jason was mildly discouraged, not turning out at all like a brown ale, simply an ale that was brownish in color. But stop he did not, Jason went out and purchased himself another Brewers Best kit, this time his favorite style, an India Pale Ale. This time the kit came with specialty grains and hops!! A whole new era of brewing was upon them at Center City Brewing, a kit that forced Jason to follow directions, steep the grains for this long, add the hops on this schedule, a rockin' he was.
Well, seeing as Jason's kit did not include that many hops, it really did not taste very different than the brown ale that was created the batch before. This meant leaving the wonderful world of kits and moving onto recipes. This technique proved to provide Mutt Brewing with better beers, yet more margin for error. Some of the errors include:
. Over-priming a Fat Tire Clone, creating the issue of having to empty each and every bottle into a gallon pitcher before pouring into the glass.
. Boiling the oats for an oatmeal stout recipe, and then leaving them in the fermenter.
. Fishing out the rubber gasket that belongs in the fermenter lid out of the fermenter with an unsanitized hand.
Well as you can see this is just a short list of the errors, and Center City Brewing Company only has so much bandwidth, so we will continue on with the history.
Soon the making of extract beers seemed too easy, not 'Mad Scientist' enough, thus the move into the All Grain arena. With the move to all grain brewing, Mutt Brewing decided to change their name to Center City Brewing Company.
The name Center City comes from a township that existed just west of Milwaukee around the 1850's. Center City is where some of the original brewers of Milwaukee bought 3 acres of land to house their brewery. This brewery would, through many years and transactions, become A. Gettelman Brewing.
Proprietor Jason Pinkowski decided that this brewery was creating some fine ass brews, and decided he should share them with the world. He contacted his good friend, Marina Rodriguez-Rehl about possibly opening a brew pub in the fine Village of Wauwatosa, which is just down the road from the former Township of Center City. The partnership was chosen since they both work for the same company, both have a large distaste their boss (Big Fat Piece of Shit who wheres ham pants) and with Marina being both female and a minority, she would have a MUCH better chance of getting a buisness loan for opening the brewpub. Well, dreams can happen!! Jason is currently in the process of trying to find a job at brewpub to learn the commercial aspects of brewing, and Marina is busy figuring out just how herself and Jason can actually make this silly dream come true.
